Food truck permits in Denver: what changed, what didn't
Denver was the holdout: it ran a completely separate, consolidated license (health + fire + placement) for its ~715 licensed mobile establishments while the rest of Colorado licensed through counties. HB 25-1295 folded Denver into the statewide reciprocity system on January 1, 2026.
Still local in Denver
- Denver decides reciprocal food-safety applications within 30 days (the rest of Colorado: 14)
- A Colorado state health department license can be converted into a Denver food safety license under the new law
- Denver's placement rules — where trucks may park and for how long — survive reciprocity
- Denver's excise-and-licenses business layer still applies
If Denver is your home license, you hold the strongest seed in Colorado: every other jurisdiction must process your reciprocal application inside 14 days. If Denver is your target, budget the 30-day clock, not 14.
